Ingredients
(Serves 6 to 8 people)
1 whole chicken, cut into pieces, or 6 to 8 pieces of your preference.
6 red potatoes, peeled and cut in half
6 pieces of yucca, cut in half
For the sauce:
1 large white onion
3 medium ripe tomatoes
1 red bell pepper
2 tablespoons of complete seasoning
2 chicken bouillon cubes
- Color, cumin, and salt to taste
Preparation:
Heat 8 cups of water, add the chicken until it boils. Blend the sauce ingredients with 3 cups of water and add to the pot. Add the potatoes and yucca and cook until the chicken is done, the potatoes and yucca are tender, and the sauce has thickened slightly. Taste and serve hot with rice and avocado.
If desired, you can also serve a salad of chopped cabbage, carrots, and celery seasoned with lemon, salt, pepper, some finely chopped cilantro leaves, and a little olive oil.
